Living with diabetes

Many of you know I have type II diabetes. I've been experiencing high glucose lately, so I am back on checking off foods that raise it. My worst enemy is the whites. Potato, pasta, & breads to be specific. So I've scratched them off my eating list the last 2 to 3 weeks and that has helped. My problem, though, is that I feel the need to eat those foods. So the search began, and we found that barely is one of the best grains for diabetes. So far we've made barely noodles and barely pancakes. So far so good, the glucose is lower the next morning after the noodles. So tonight we threw this dish together.

1/2 recipe of barely noodles, 3/4 lbs. fresh shrimp, 1 summer squash, 1 green pepper, 1/2 onion, about 8 mushrooms, garlic, and about 1 cup tomato sauce. Cook the noodles, set a side in chilled water, prepare vegetables to you liking. Stir fry the vegetables in a wok. Stir fry the shrimp in the noodle pan, when done add the noodles to the shrimp. When the vegetables are done add the shrimp and noodles to the wok. Then add the tomato sauce, stir and serve. Season to taste. It was a great dish, I also sliced some fresh tomato's and added those just prior to serving. This would serve 4. I'll let you know tomorrow how my blood glucose was.

Christmas Vacation

So far there's been lots of football to watch. It's Tuesday and I'm watching Sunday Night Football. Go figure. Christmas eve was spent with family at the Jacobson house hold. On Christmas Day, they returned the favor and came over to our home. Both family's were missing some members, but needless to say they were in our prays and hearts. To much food as usual, aren't we truly blessed to have those pleasures. That brought on the need for exercise. Sessions at the Rec Center or cross country skiing are my choices. The Rec is alright, but truly the skiing is a better workout. Attached is skiing photos from today's adventure out at Buck and Deb's farm. The snow was deep and bright. The sky was blue. The exercise was awe some.

Winter blizzard's.

Winter blizzard's are fun, if you can stay in. Which for most part I did today. Now we can say for all practical purposes we had a blizzard today. About and 18 hour for the record. Not a lot of snow, but lots of wind.

Well last night Abby & I enjoyed our Christmas gift from the kids. Supper at the Cottonwood Bristo in Brookings and then a concert featuring Manhiem Steamroller. A good time was had by all.

Winter Time Hobbies

As the season continues to move its way into winter, my hobbies also move into a new mode. My last post found me on my initial cross country ski, it was fulfilling and yes I was a little stiff afterwards. Along with my continuance of my outdoor activities, my plans are to continue my passion for the arts. So late fall brings you "Angus Grazing", hope you enjoy.......

Thanksgiving 2010

Tomarrow is Thanksgiving and we're staying home to celebrate. All will be home, Rebecca, Benjamin, & Joshua. Benjamin will be with Julie, Rebecca's Jesper will be in Europe and he'll be missed. Tradition for me is watching the Lions game and then we'll eat. Turkey, mashed potato, corn, pie, all good stuff......Hope you all have a great Holiday.....
